Recipe Thursday 02/27/25 ft. Slow Cooker Garlic Parmesan Chicken

Ingredients:

  • 4 chicken thighs (with bones and skin)


  • 3-4 cloves of garlic, minced


  • 3 tablespoons of olive oil


  • 1 teaspoon each of garlic salt and paprika


  • 1 cup grated Parmesan cheese


  • 1 pound baby potatoes (can halve)


  • Salt and pepper, to taste


  • Fresh parsley, chopped (for garnish)


Instructions:


1. Mix minced garlic with garlic salt, paprika, 2 tablespoons of oil, and salt/pepper (to taste) above in a small bowl.


2. Use half of his mixture and season chicken thighs. Brown thighs with 1 tablespoon of oil over medium heat in a skillet (~2 mins each side). This step will maximize flavor and give the thighs this great golden look.


3. Put potatoes into slow cooker and season with rest of seasoning mixture. Place the chicken thighs on top.


4. Cover the slow cooker and cook on low heat for 6-7 hours or on high heat for 3-4 hours, until the chicken is cooked through and tender.


5. Once done, season with cheese on top before serving.


Serve the Slow Cooker Garlic Parmesan Chicken hot, garnished with freshly chopped parsley. It pairs beautifully with steamed vegetables, roasted potatoes, or creamy mashed potatoes.
