Crock Pot Jambalaya is such a hearty meal with chicken and sausage. Packed with just enough heat to jazz it up but perfect for the entire family to enjoy.

Ingredients:
1 1/2 lbs chicken breasts (diced into 1 inch pieces)
1 lbs andouille sausage links (sliced into ½ inch pieces)
1 Tbsp cajun seasoning
1/2 onion (diced into small pieces)
1 red bell pepper (diced into large pieces)
1 green bell pepper (diced into large pieces)
2 stalks celery (sliced)
2 tsp minced garlic
1 can crushed tomatoes (14.5 oz can)
2 tsp dried oregano
1 cup chicken broth
3 cups cooked rice
Instructions
Place all the ingredients in the crock pot except for the cooked rice.
Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through.
Stir in the cooked rice. Serve warm and enjoy!

*Refrigerate the leftovers in an air tight container for up to 5-6 days.
